Nathaniel from Downshift Coffee in Belfast welcomed us at his roasting facility where we talked all things Downshift. During our conversation he shares how, and why, the ways in which coffee is processed affects the flavor of coffee.
"Washed you are going to get a cleaner, just pure coffee flavor. And then natural you are going to get a more fruit, a little more wine, a little more sweetness and maybe a little bit of some interesting flavors you were not expecting out of a coffee. And that's because it has been processed in a way that leaves more things on the bean."
